Executive Chef Javier Viera Demos 10th & Piedmont Heirloom Tomato Salad at Piedmont Park Green Market on May 17



Javier Viera is the executive chef for all three Communitas Hospitality restaurants: 10th & Piedmont, G’s Midtown and HOBNOB Neighborhood Tavern. His gorgeous heirloom tomato salad at 10th & Piedmont is a crowd favorite, and you can learn how to make it at this Saturday’s Piedmont Park Green Market. With tri-colored heirloom tomatoes, hydroponic cucumbers, red onions, feta cheese, fresh basil and balsamic vinegar, it’s destined for your own “heirloom” recipe file. Viera leads the demo on the Community Center patio at 11 a.m.

Get Asparagus Tips from Nikolai’s Roof Chef de Cuisine Stephanie Alderete at Piedmont Park Green Market




This Saturday, May 10, visit the Piedmont Park Green Market to pick up some asparagus tips from Stephanie Alderete, chef de cuisine at Nikolai’s Roof in the Hilton Atlanta. Alderete will prepare charred asparagus salad with Calabrese feta and egg yolk emulsion. Clip and save her recipe so you can focus on her steps. Chef demos take place on the Community Center patio during the 11 a.m. to noon hour.

Charred Asparagus Salad, Calabrese Feta and Egg Yolk Emulsion

Charred Asparagus
1 ea. bunch asparagus, standard size
1 oz. olive oil
1 tsp. salt
1 tsp. black pepper
Trim bottoms of asparagus, toss with oil and salt & pepper. Grill on high heat for 3-5 minutes. Remove from grill, cool completely and cut into 1 inch pieces.

Calabrese Feta
4 oz. feta cheese, cut into large dice
1 tbsp. Calabrese chile oil
1 ea. Calabrese chile, minced fine
2 oz. olive oil
1 tbsp. black pepper

Egg Yolk Emulsion
6 ea. large egg
1 oz. sherry vinegar
1 tsp. grain mustard
1 tsp. parsley, minced fine
1 tbsp. salt
1 tsp. black pepper
2 oz. olive oil
Cook eggs in immersion circulator for 90 minutes at 62.8 degrees Fahrenheit. Remove eggs and cool completely. Remove yolk from eggs and discard whites. Add remaining ingredients, excluding oil, and whisk to combine. Whisk oil into mixture and set aside.

Tomato Confit
1 pint yellow grape tomato
2 oz. olive oil
1 oz. white balsamic vinegar
1 tsp. each coriander seed, fennel seed and black peppercorn
2 ea. bay leaf
Place all ingredients in vacuum bag and seal. Cook sous vide at 65 degrees Fahrenheit for 1 hour. Cool completely in vacuum bag. Remove tomatoes from oil mix, reserve for later use.

Ciabatta Crouton
4 ea. ciabatta rolls, cut into medium dice
1 oz. clarified butter
½ tsp. garlic powder
½ tsp. onion powder
1 tsp. salt
Toss all ingredients together, bake at 375 degrees Fahrenheit for 5-8 minutes, until toasted but not too dark.

To assemble
Place asparagus in bowl. Drain the feta from the oil, save the oil for later use, add feta to the asparagus. Add the crouton and tomato confit; drizzle 2 oz. of the emulsion sauce over the salad and toss to combine. Serve chilled.

RA Sushi and a Show: The Green Market at Piedmont Park July 7 Chef Demo



Saturdays at Piedmont Park mean shopping at The Green Market, which boasts fresh and local ingredients from spring to fall. Thank goodness there are pro chefs at the market to show us how to integrate these ingredients into farm-fresh dishes. This Saturday morning, shoppers can count on RA Sushi chefs to be at the demo booth from 11 a.m. until noon. So, take a stroll and a roll all while gathering fresh produce and prep ideas. From Piedmont Park to the Georgia Dome... Catch Chef Janine Falvo Around Town This Weekend


Janine Falvo seems to be everywhere these days! While "Top Chef:  Texas" had her skedaddling out west, Briza's executive chef spends the majority of her time creating Southern-influenced, whimsical dishes that are drawing happy diners in at the Midtown restaurant. On Saturday, November 12, she won't have to travel far when she journeys the few blocks from Briza's turf adjacent to the Atlanta Renaissance Midtown Hotel to the Piedmont Park Green Market. Falvo will lead the Green Market chef's demo from 11 a.m. until noon on the patio. Market opens at 9 a.m. for shopping; fill your shopping bags with seasonal good stuff then get some prep and serving tips from Falvo.    

On Sunday, Falvo will be at the Georgia Dome, heading up the local chef stand while the Falcons take on the New Orleans Saints at 1 p.m. While the Falcons battle it out on the field, Falvo will be stirring things up inside 2View Restaurant located in the Dome's east end zone on the executive concourse (near the suites). Chat with Falvo and savor her dishes without missing a minute of the action on the field.

It's Lovely in the Park with RA Sushi

Asha Gomez Brings Touch of Kerala, India to the Piedmont Park Green Market Tomorrow


Tomorrow Chef Asha Gomez, the creator of the Spice Route Supper Club, will be demonstrating her expert use of fragrant spices from Kerala, India to amplify the tastes and finds at the Piedmont Park Green Market. Gomez will be host a free class tomorrow at 11 a.m. behind the demo counter.


The gates for the market open at 9 a.m. So come early to browse this open-air market, which features fresh produce and locally made goods.

Cocktails in the Garden and Piedmont Park's Green Market Start This Week

Botanical GardenEven though it was a little chilly this morning, rest assured that it's Springtime in Atlanta and your favorite outdoor activities are back! Tonight kicks off the Atlanta Botanical Garden's Thursday night Cocktails in the Garden. Spice Market, in the W Atlanta-Midtown, will provide the yummy, complimentary appetizers for the season opener May 5 from 6-10 p.m. I love this event! Mingle around in the beautiful garden grounds, listen to the DJ, enjoy a cocktail and nosh on delicious nibbles. Free for garden members; guests are $18.95. Guest passes will be accepted. Our Weekend Agenda: Cooking Demo with Chef Kevin Gillespie

We like a good surprise as well as anyone, so we're not peeking or passing on hints as to what Woodfire Grill Executive Chef/Co-owner and "Top Chef" star Kevin Gillespie will be preparing during his Piedmont Park Green Market demo on Saturday, December 11. 

Look for him from 11 a.m. until noon inside the Community Center.  Our plan: come with a hot java, shop a bit and then warm up while we watch Gillespie dole out culinary wit, wisdom and magic!

Spice Market Steps Outside

Looking for a reason to stay outside on a beautiful day like today? Well, we’ve got the perfect event to embrace this amazing weather. Today, Spice Market Executive Chef Mauro Gomez will provide complimentary appetizers at the Atlanta Botanical Garden's weekly Cocktails in the Garden party. This month’s theme, "Mocha & Mudslides," ushers in the chocolaty goodness of the Garden's newest exhibit, Chocolate: Seed to Sweet. Treats and drinks at the 6-10 p.m. party will be derived from the cacao tree. Tickets are just $15; garden members free; guest passes accepted. Full cash bar.

If today is already booked, then you can catch Chef Gomez at the Piedmont Park Green Market's 11 a.m. chef demo this Saturday, September 18. This event is free, although you'll probably spend some green beforehand on fresh veggies and other finds at the Green Market.

Chef Shaun Doty Gives Tips on Gazpacho at The Piedmont Park Green Market

Once again, Shaun Doty is taking center stage at the Piedmont Park Green Market. This Saturday, June 26, he'll be preparing a summertime favorite -- gazpacho. You'll find Doty slicing and dicing from 11 a.m. until noon under the patio at the Piedmont Park Community Center. After that, head home to try out his techniques or enjoy brunch or dinner that night at his restaurant, Shaun's in historic Inman Park.

Get to know Julia LeRoy


This is Julia LeRoy. She's going to be a famous chef. You know we wouldn't steer you wrong! Why not be a real culinary insider and meet her now before she has an entourage and bouncers to keep you away? You can do just that tomorrow at the Piedmont Park Green Market.
The up 'n coming LeRoy knows Atlanta's best restaurant kitchens (she's worked in some of them), and she's equally comfy adding her own touch to an ingredient-splattered church cookbook propped up against a mixing bowl in her home kitchen. The Culinary Institute of America - NY graduate has roots in Guenter Seeger's Dining Room at The Ritz-Carlton. Perhaps you heard about her "Locavore Mondays" that supported local farmers, sustainability and creative sustenance for Atlanta diners. Cooking at the Piedmont Park Green Market will be right up her garden row!
