Let’s Hear It for the Grills – and Grilling Tips from Atlanta Chefs

We grilled Atlanta chefs about a topic near and dear to their flame-kissed hearts and very pertinent to a succulent gridiron season. Fire up the charcoal, but stop playing with your patties, advises Ray’s at Killer Creek executive chef Mike Fuller. Translation, for a juicy, tender burger, patty super-fresh ground beef until it just holds together.

Garrett Teckmyer, executive chef of 
Buckhead’s The Big Ketch, relies on planning and prep, soaking wood chips overnight then mixing them into the hot coals to add a nice smoky flavor to burgers. Teckmyer encourages branching out and grilling something different. He suggests wrapping crab legs in a wet paper towel, enfolding them in an aluminum foil packet and tossing the packet on the grill for five minutes. 

Aria’s executive chef/owner Gerry Klaskala divulges that his Big Green Egg is his secret weapon. He rebels against lighter fluid, suggesting food tastes better when grillers use a chimney fire starter.

Gypsy Kitchen executive chef Matthew Ridgway advises using wood-based charcoal, pointing out that even though it’s pricier, less charcoal is needed.

Naturally, celebrity chef/owner of 
Gunshow and Revival and “Pure Pork Awesomeness” cookbook author Kevin Gillespie’s favorite thing to grill is pig. He even has a simplified Korean barbecue recipe in the book for the ever versatile meat, using thinly sliced pork shoulder and “whatever condiments you have.”

When it comes to ingredients, our chefs agree: buy the best you can find. As a huge Penn State and NASCAR infield tailgater, 
Marlow’s Tavern executive chef/co-founder John Metz always urges using quality steak, ribs or brisket, and he implores grillers not to compromise. Fuller prefers turning to a trusted butcher for hand-cut steaks that are at least an inch thick and choosing a rib-eye or a New York strip that has a 1/4-inch fat cap, which will melt and baste the steak as it cooks. Ridgway advises letting your grilled masterpiece rest for 10 minutes and pouring those delicious salty, meaty juices into your baked potatoes.

“Get Up in Our Grill” Party at Marlow’s Tavern Dunwoody – September 14

Touch Down With John Metz at the Falcons Game on October 9th

Those Green Bay Packers can keep their cheeseheads; Marlow's Tavern and Aqua blue Chef/Owner John Metz is bringing the heat to the Georgia Dome at the Atlanta Falcons home game on Sunday, October 9 at 8:20 p.m. Talk food, or football, with Metz inside 2View Restaurant located in the Dome's east end zone on the Executive concourse (near the suites).

Take your game-day eats to the next level and pass on the dogs and nachos. 2View will be preparing some of Chef Metz's signature rave-worthy recipes for you to purchase and savor. Sounds like a fantastic place to touch down that night!

We Want YOU to Salute Summer Grilling at Marlow's Tavern

Starting today, all six locations of Marlow’s Tavern are offering a star-spangled "Red, White and Brew" menu for the next six weeks that you won’t want to miss. The limited time menu is filled with all-American dishes like fiery deviled eggs; a watermelon, feta and arugula salad; chili-slathered corn on the cob; a backyard “brat” melt with grilled beer bratwurst; honey glazed grilled chicken; sweet berry shortcake; and a “summertime” watermelon margarita ($3-$12). These items are only available until July 26, so you’ll want to get in as much gobbling as you can before then (trust us, we would have given anything for just one more day of Bayou Burgers last time Marlow’s offered a special, limited time only menu).

There’s also something special happening for those of you who prefer to do your grilling at home. During this "Red, White and Brew" celebration, Marlow’s is hosting a recipe contest and the top prize is a Big Green Egg! Guests can submit recipes for their own signature grilled dishes online at www.marlowstavern.com or fill out an entry form at one of the six tavern locations through July 27. Executive Chef/Owner John Metz will review all the recipes and determine the winners by August 15. The winner gets a Big Green Egg and the honor of having their recipe featured on Marlow's fall/winter menu. Proceeds from the sale of the winning recipe will be donated in the winner's name to Special Olympics Georgia. The second-place winner takes home a $50 Marlow's Tavern gift card, and the third-place winner receives a Marlow's Tavern "Red, White and Brew" limited-edition t-shirt.
